The Process

4 still column distillation of Guarapo (Sugar Cane Juice) vs. Molasses (only ~10% of all rum is made using Guarapo).

Aged Eight Years. The first
6.5 years are spent in ex-bourbon American white oak barrels and the final 1.5
years in ex-Sherry barrels provide for a unique, subtly sweet finish.

Naturally Aged. Vs. the Solera method which blends rums of various ages and can claim
the oldest age vs. the linear method more commonly used in whiskeys and single
malts.

Nose. Delicate aromas of Oloroso Sherry,

Finish. Clean, dry, and subtly sweet with notes of wood, spices, and toasted
